Day 5: Heart shaped Tea Sandwiches with Lemon Curd and Lingonberry Jam

A “Tea Sandwich” really just means that you cut the crusts off and are left only with the soft layers of bread on both sides. And most often at least one side of the bread is spread with butter. Mmm, bread and butter. But if you want to kick it up a notch and make your tea sandwich into an edible valentine then I suggest spreading Trader Joe’s Lemon Curd on one side and lingonberry jam from IKEA on the other side. Then cut it  with a  heart cookie cutter and voila you’ve got a super sweet valentine for yourself or someone you love. The berry color of the lingonberry jam peeks out nicely between the white layers of bread and softly whispers “Be My Valentine.”

Other ideas for Tea sandwiches (all of which can be cut into hearts if desired):

cucumber and mint

chicken salad

egg salad

brie and sliced green apples

watercress and goat cheese

apricot jam (any jam with butter is good)

dill cream cheese with thinly sliced tomatoes
